Pisto (Spanish-style Ratatouille)

This one is a real Spanish classic that many of you may not be too familiar with. It’s a recipe that is packed with goodness, and tastes even better the next day… so make sure you make plenty!

Pisto is very similar to ratatouille but has slightly more tomato, and the vegetables are cubed instead of sliced which actually makes a real difference to the dish. Pisto Gallega (Galician-style) makes this into a complete dish, by adding some crispy cubed potatoes also known as Parmentier potatoes, topped with a crispy fried egg… you have to try this!

This recipe is really easy to remember as its equal quantities of chopped vegetables and a can of chopped or whole tomatoes. A great weekly meal that is healthy and nutritious, and a great vegetarian option!

tip: Keep to the order of cooking the vegetables for best results!

Ingredients

300g white onion, diced into 1-2cm cubes

300g fresh Peppers (mix of red and green), diced into 1-2cm cubes

300g Courgette, diced into 1-2cm cubes

300g Aubergine, diced into 1-2cm cubes

400g of tinned chopped OR whole tomatoes (roughly break them up if whole)

1tsp of dry thyme OR a couple of springs of fresh thyme

3tbsp of olive oil

Method

  1. Heat a large saucepan and add the olive oil. Gently sweat the onions down till soft (try not to brown them) this should take 4-5 minutes.

  2. Then add the fresh peppers and repeat, cooking down till soft for 5 minutes

  3. Add the courgettes and aubergines and repeat till soft.

  4. Add the thyme and cook till fragrant

  5. Add your tinned tomatoes. Bring to the boil and simmer for 15-20 minutes.

  6. Serve as is, or add some crispy potatoes and a fried egg for a Pisto Gallega

And that’s it! Quick, easy and super healthy!

If you have any leftovers the next day you can add it to your sandwich, serve it with some rice or simply enjoy as is.
