Spanish Chicken

This recipe makes for a great tapas dish for all those dinner parties you have planned! or as a quick evening meal served with some potatoes or rice 👌

We topped this recipe off with some of the amazing Made for Drink chorizo thins - they’ve become a HUGE favourite in our house. I recommend any you who like chorizo these are great to snack on and they aren’t greasy either! We simply chopped them roughly and sprinkled them over the top.


Tip: By cooking the chicken breasts whole you’re less likely to dry it out.

Ingredients

2 Chicken Breasts, kept whole

1 Red Pepper

1 Onion

1 Bottle of Salsa Brava

2 tbsp olive oil

crushed Chorizo Thins by Made for Drink

Method

  1. Pre heat the oven to 200

  2. In a small roasting tin roughly chop 1 red peppers and 1 onions (2” pieces) . Drizzle over some olive oil and salt (you can add seasonings of your choice - try a whole garlic bulb without peeling for roasted garlic - perfect to make a garlic butter.) Place in the oven whilst it heats up and once it reaches 200 - cook for 10 minutes.

  3. Season the chicken breast with some salt and pepper. Heat up a pan till it starts to lightly smoke. Add 2tbsp of olive oil and quickly brown the chicken (1-2 minutes each side).

  4. Take out the roast vegetables, place the chicken breast on top of the vegetables and coat the really well with salsa brava (half to 2/3 of bottle).

  5. Bake for 18-20 minutes at 20 or till cooked through.

  6. Take out the oven and let it cool for a couple of minutes. Then slice the chicken into 2” pieces. Place on the bed of roasted vegetables and add a couple tbsp more of salsa brava to finish.

  7. Serve and enjoy - Buen Apetito!


For a full meal why not add some chips or sautéed potatoes. You could also make some garlic bread with the roasted garlic butter - perfect as a tapas dish!
